Light straw-yellow colour, not quite filter-bright in the glass. The aroma is elusive, dry/savoury and nondescript, but for a certain nuttiness which nods towards fermentation in wood. The nutty and smoky/lees and barrel aromas grew in volume with time in the glass. The palate is properly dry and savoury, quite rich and supple, with a lot of texture thanks in part to barrel use and subtle retained tannins. This does interesting things with the fiano grape.

The blend of Chardonnay and Fiano is unique to Six Acres. Fiano is an ancient Italian variety derived from the warmer climates. We source ours from Heathcote. It marries well with our cool climate Chardonnay bringing honeyed characters to our savoury white!
Process -
Chardonnay was pressed and fermented in large format oak
Fiano fermented in an Italian Terracotta Amphora
Left on lees for 7 months to achieve a nice complexity
Unfined and unfiltered
Nose - A honeyed, floral nose with subtle nutty aromas
Palate - A beautifully balanced and flavoursome wine without aggressive acidity, with a savoury edge and a touch of honey
Food match - Seafood fettuccini or burrata and charred capsicum
